James Fiske joins Seaduction Restaurant + Bar as Executive Chef, bringing over 20 years’ experience working in Michelin starred establishments across the UK and Europe.
One of James’ most important food philosophies is to work with local, seasonal produce to create dishes that are innovative and technical but accessible. He enjoys highlighting one hero feature of a dish and crafting everything else on the plate to enhance that one prime element.
James’ extensive training and approach to new dining experiences is to create a modern and dynamic European menu with Australian influences that perfectly complements Seaduction Restaurant + Bar setting.
